A simple guide to cook these five meats
Wagyu Denver Steak
This Wagyu steak can be grilled or pan-fried.
Heat a thick-bottom pan or grill, add oil and wait for it to start smoking.
Cook this steak on each side for 3-4 minutes for medium rare. Add two more minutes on each side for medium.
Grass-fed Beef Tenderloin
See here a guide to butchering this whole piece and cooking fillet mignon medallions. The videos are in this product's page.
Ibérico Pork Presa
This piece can be cooked in a pan, the grill or the oven. It can also be seared first and then finished in the oven. Remember Ibérico pork can be enjoyed pink.
If cooking it on the pan cook for 5-6 minutes on each side.
Otherwise sear it for 2 minutes on each side and then finish it in a 200-degree oven for 10-12 minutes.
Criollo Pork Sausages
These have been steamed already so they only need to be cooked (in a pan/grill/oven) for 4-5 minutes before they're ready to be enjoyed.
Boneless Lamb Chump
Each of these weighs around 320 grams.
Heat up a thick-bottom pan or grill and cook these for 6-7 minutes on each side for medium rare or for 9-10 for medium, as we recommend to enjoy this cut of lamb.
Otherwise sear it for 3 minutes on each side and then finish it in a 200-degree oven for 14-16 minutes for medium.
Whilst I test and cook each of the cuts we sell I'm aware our ovens can vary greatly. You know yours best so do adapt any cooking times accordingly.
