Whole Scottish Lobster

A simple guide to help you cook your Scottish Lobster to perfection.
Cut the hard shell open down its centre with a pair of sharp kitchen scissors or knife, starting at the top of the head all the way through to the tail.
Arrange each half of the lobster on a baking pan and baste each with 1 teaspoon of oil or margarine to prevent the meat from drying as it bakes.
Preheat your oven to 200 degrees with the top grill on and bake the lobster in the middle of the oven for about 10-12 minutes. Avoid overcooking it or it will dry up.
Transfer the lobster to a serving platter with tongs and serve with fresh lemon wedges.
