Pão de Queijo & Chimichurri
These two are perfect partners. Get a pão de queijo and dip it in your chimichurri. You can have the cheese breads by themselves, if you prefer, of course.
For your cheese bread, preheat your oven to 200 degrees. Once ready put your cheese bread on a tray and bake for 12-14 minutes until golden.
To prepare your chimichurri, you need to combine the same amount of chimichurri mix, water, oil and vinegar.
So, if you wish to make a small amount, say, a tablespoon, you simply add and stir a tablespoon of each until combined.
Once my embers were ready I moved them under the grill and put the spicy chorizo and the pork tomahawk first.
Cook the spicy chorizo for around 8-10 minutes on each side.
For the pork tomahawk I first put it on its fat side and let that sear for around 7 minutes. I then cooked it on each of its sides for 8-10 minutes.
Next up I put my cowboy steak on the grill. It has some beautiful thickness, and for a medium rare point I left it on the grill for around 9-10 minutes on each side.
Last came the steaks, because they are thin so they require the least amount of time.
I grilled the rump steak and flat iron steaks for around 3 minutes on each side.
All that's left now is to get your favourite side dishes or salads and enjoy your August asado, Fazendeiros.
