This bone-in Galician Blond cut is dry-aged for a minimum of 40 days and is the perfect sumptuous sharing steak, with a thickness of around 4cm.
Derived from 100% grass-fed cows, the fat infiltration and yellow hues due to the diet of the animals contributes to the flavours, which can result in a delicate sweetness at times.
Exclusive to the north of Spain, this particular breed is truly special, with cows being at least 10 years of age.
