We absolutely love eating these in Argentina. Bone marrow is usually a key ingredient when making stock or broth, but it can be roasted and eaten on top of a steak, or even a good crispy piece of toast.
Our bone marrow comes pre cut, which makes it easier to eat, and we have cooked it Sous Vide for 4 hours; all it needs is a quick reheat in the oven and it will turn into an almost nutty beefy butter.
