Presa Ibérica comes from the shoulder part of the animal, near the head of the loin.  

A beautifully tender, well-marbled piece - this cut benefits from a blend of the finest characteristics from both loin and shoulder cuts. 

As with all Ibérico pork, you can expect to find an incredibly flavoursome piece with this Presa thick shoulder steak. 

In comparison to other steaks derived from the Ibérico black pig, this cut is usually more lean than its peers Pluma or Secreto flank steak, despite its thickness. 

A rare and unique breed, acorn-fed Ibérico black pigs derive from the countryside of South Western Spain near the Iberian Peninsula. The distinctive, complex and highly-acclaimed flavours can be attributed to the diet, lifestyle and surroundings of the whilst rearing. 

This meat is 50% Iberico.
