French trimmed for visual appeal and to save on preparation time. This delectable and versatile cut derives from the finest breed of New Zealand Lamb, and offers a perfect level of marbling. 

Try cooking it with a pesto crust before slicing and pouring over a jus. Unlike beef, which differs with cut and personal preference, in the case of lamb it's best to cook it medium unless you're slow-cooking it. This means it will be tender and juicy and have a lovely pink blush to the flesh.
