Pluma is a well-marbled cut located right above the shoulder of the pig. This succulent and tender piece tastes best when seared on a griddle and cut into chunks.

A rare and unique breed, acorn-fed Ibérico black pigs derive from the countryside of South Western Spain near the Iberian Peninsula. The distinctive, complex and highly-acclaimed flavours can be attributed to the diet, lifestyle and surroundings of the whilst rearing. 

This meat is 100% Ibérico Bellota.

One piece can serve 2-3 people.
